Finding the editor of a nonfiction book

In a Novel Marketing episode about avoiding editors who flatter an author, Thomas suggested using an editor that others in one’s genre have used. How would I find out who was the editor for a book? Unless a book is a collection of essays or stories, no editor will be listed. How do you figure this out? Thanks.
